HYB Muffins

HYB Gluten-Free Herbed Muffins

Gluten-Free, Dairy-Free, Refined Sugar-Free, Vegan

 

Ingredients:  

2 ½ cups Almond Meal

½ cup Ground Flaxseed

1 tsp. Baking Soda

1 tsp. Himalayan Sea Salt

5 Large Organic Cage-Free Eggs

2 Tbsp. Maple Syrup

2 Tbsp. Coconut Oil (or MCT Oil)

2 Tbsp. Apple Cider Vinegar

2 Tbsp. Fresh Thyme Leaves, pulled off stem

2 Tbsp. Fresh Rosemary, pulled off stem, finely chopped

Instructions:

  1. Preheat oven to 350 degrees F.
  2. In large mixing bowl, combine DRY Ingredients: Almond Meal, Flaxseed, Baking Soda, and Sea Salt. Whisk until well combined.
  3. Melt Coconut oil to liquid consistency before adding to WET Ingredients, or can use MCT Oil.
  4. In separate medium mixing bowl, combine WET Ingredients: Eggs, Maple Syrup, Coconut Oil, and Apple Cider Vinegar.
  5. Add WET Ingredients to the bowl containing the DRY Ingredients slowly. Mix thoroughly until evenly distributed.
  6. Add Fresh Herbs, Thyme and Rosemary, to mixture and blend thoroughly.
  7. Grease muffin tin generously with coconut oil. Evenly drop batter into each muffin cup. Mixture makes 1 batch of 12 muffins.
  8. Bake for 20 minutes, or until toothpick comes out clean from the center. Let cool in the pan before serving.
  9. Store muffins in airtight container. Muffins will become moister after sitting overnight in a sealed container.

I LOVE my morning jolt of caffeine when I awake and just prior to going to the gym.  I get that extra energy boost I need for my workouts, and the caffeine and warm liquid of the coffee help keep my asthmatic airways open.  I also know it is very important to have protein prior to going to the gym to help you sustain your workout.  What if we marry my two favorites?  What would happen?

In this video, I highlight the simple technique you can do at home, WITH NO SPECIAL EQUIPMENT, to achieve a smooth and creamy CHOCOLATE PROTEIN COFFEE without the clumps.  After endless failures that led to excessive waste and many dumps down the drain, I couldn’t find just the right technique to get rid of those nasty clumps.  I didn’t want to “chew” my coffee!  The beauty of a high quality whey protein, like Jay Robb Chocolate Whey Protein or Jay Robb Vanilla Whey Protein, is that the protein will dissolve evenly if aggitated just right.  If you like extra foam, you can throw the coffee and the protein powder in your Vitamixor Blendtec blender and it will work fine.  But if you can’t afford a high power blender, this technique is right for you!

Gluten-Free DIY SHRIMP Pesto Zucchini Zoodle Pasta Quick & Easy How-To Cooking Demo

What’s for dinner tonight?  How about a Seafood Zoodle Pasta dish?  With all of my food intolerances I had to create a recipe that tasted similar to my favorite pasta pesto dish, but without the cheese and gluten.  I do allow myself shrimp every now and then, and when I do, I love this recipe!  If you are also watching your weight, this option is great because it is also low-carb and guilt-free!

In this QUICK video, I show you how to make a very simple seafood entree tonight!  You will use some of the skills I have been teaching you in the past video cooking demo blogs.  Combine the zucchini “zoodle” making video using the handy-dandy VEGGETTItool, homemade dairy-free pesto, and the super delicious colorful veggie salad.  Combine all of these and you have a slam-dunk winner!!!

Traditional Polish Pierogi Recipe, Part I: WARNING- Not THAT Healthy, but YUMMY!

Part 1:  Traditional Polish Pierogie Recipe with Dr. Lori

One of my most favorite and treasured family traditions, and best holiday memories, is having Pierogies and Borscht on Christmas Eve.  Our family would go to Christmas Eve vigil mass and come home to the smell of borscht and carmelized onions from the pierogies Mom had spent days preparing for our feast.  We would even have contests to see who could eat the most.  Her specialty was sauerkraut, potato and cheese.  She would boil them, fry them in butter with carmelized onions, and put them in the oven to crisp up.  Later we would would eat them with either sweet cream, or my preference, sour cream.

Being gluten-intolerant I was trying to experiment with other types of flour to make these gluten free so I could enjoy them without the stomach distress later, but I quickly found that rice flour does not work and I had to throw the whole batch away!  Don’t experiment with a recipe on the day of the holiday… in this case it was Christmas Day!
